4 Easy Ways to Add More Veggies

I’ll be honest - there are some days.. Actually, on MOST days… a warm, out-of-the-oven chocolate chip cookie sounds more delicious to me than a bowl of steamed broccoli.

However, I know that I FEEL my best, and I live in a body where I am confident and energized when I prioritize eating veggies MOST of the time, while still enjoying those amazing chocolate chip cookies occasionally.

If you’re someone who struggles to eat veggies, here are some ways to make it easier to get them into your meals:

1. Often times, people struggle to eat veggies because they force themselves to eat ones that ARE healthy but that aren’t appealing. Create a list of veggies you can tolerate, and stick with those ones!
2. Use a food processor, chopper, or blender to finely chop veggies you tolerate, and “secretly” add them to meals for your family. Finely chopped veggies can be added to burgers, meatballs, tacos, etc. The possibilities are endless, and finely chopped veggies often take the taste of the foods they are mixed with.
3. Get creative and try preparing them new ways. Recently, I’ve been on an air-fryer kick for preparing veggies. Experiment and get creative! Can you add veggies to your pasta sauce? What about as a topping on tacos, or in a casserole or soup?
4. For many of us, it’s easier to create change when we understand WHY the change is important for long-term health. Aside from weight loss, start to learn the benefits of adding more veggies to your diet. For most people, eating veggies (and nutritious foods) leads to more energy, less “afternoon slumps,” a healthier gut/GI system (meaning that you 💩 on a more regular schedule), and healthier looking skin, nails, and hair.
